A December afternoon spent counting down to Christmas, with festive sweets and savories

As illuminations begin to light up Sapporo, the Christmas season is drawing near once again. Why not spend a December afternoon at the hotel, looking forward to the festive season?

At the heart of the sweets is our MGallery Artisanal Spiced Stollen, a traditional German treat rich with spices and dried fruit, said to be sliced and savored little by little in the weeks leading up to Christmas. It is joined by a haskap and ruby chocolate Santa macaron, a bûche de Noël of Earl Grey bear, bitter chocolate and yuzu, a candle-inspired verrine of strawberry and mascarpone, and more Christmas treats. Our premium Hokkaido butter scones are served with homemade haskap jam and clotted cream.

The savories, too, celebrate the flavors of winter. Warm dishes include a roasted Hokkaido Ebisu pumpkin soup scented with brown butter, and a cheese fondue made with Hanabatake Farm raclette. Hokkaido venison pâté is tucked into a brioche burger with berry gastrique, oysters and persimmon are baked into a gratinée with persimmon vinaigrette, and Mashike octopus ceviche is paired with salsa mexicana. For your welcome drink, choose from sparkling wine, Sapporo Classic beer, red wine or white wine.

From this season, reservations for one are also welcome. Whether shared with someone special or savored at your own pace, celebrate the end of the year with a festive Christmas afternoon tea.

Mexican Lunch Buffet

A Mexican Table That Begins at the Taco Bar

Mention Mexican food, and tacos may be the first thing that comes to mind. Yet tacos are only the beginning. Beyond them lies a remarkably rich table — slow-simmered dishes and soups, rice, everyday home cooking and desserts. Mexico is a country so regionally diverse that its cuisine is often described in terms of six distinct culinary regions. Following “Spice Market” and “Hawaiian Festival”, our lunch buffet continues its journey through the world’s cuisines. This autumn, the stage is Mexico.

The highlight awaits at the very start of the buffet: the Taco Bar. Take a freshly griddled corn tortilla or a crisp tostada, choose your fillings, add your salsa — and from there, it’s entirely up to you.

For fillings, there is Carnitas, pork slowly cooked in lard until meltingly tender, and Tinga de Pollo, shredded chicken simmered in a tomato sauce brightened with smoky chipotle. Five salsas await: Guacamole made with avocado; Salsa Mexicana, whose red, white and green echo the colours of the Mexican flag; the refreshing heat of Salsa Verde; the toasty, fiery Salsa Macha; and the deep, rich Salsa de Adobo. Add fresh vegetables, cilantro, cheese and pickles as you like. Start with carnitas and guacamole, switch the filling for your second, then try the nutty warmth of salsa macha on your third. Build up the heat little by little, or return to a favourite combination — that is the joy of a buffet. Even at the same table, no two tacos will be quite alike.

Beyond the Taco Bar, more of Mexico’s table unfolds. Alongside familiar favourites such as Ceviche, seafood cured in lime, and Enchiladas, well loved at Mexican restaurants in Japan, you will find Sopa de Lima, a Yucatán-style lime soup; Frijoles, the everyday bean staple, and Molletes, bread topped with frijoles and baked; Arroz a la Tumbada, a Veracruz-style seafood rice; and the vivid green Arroz Verde. The dish we most hope you will try is Mole Poblano — chicken simmered in a sauce of chilies, spices, nuts and chocolate, and a centrepiece of Mexican celebrations. The toasty depth of chilies and spices gives way to layers of cacao richness and a subtle sweetness, a flavour rarely encountered in Japan. And in Mexico, spreading frijoles on a tortilla is perfectly ordinary — so why not bring another tortilla from the Taco Bar and give it a try? It is just the kind of freedom a buffet allows.

From late October to early November, Mexico enters its most vibrant season: the Day of the Dead (Día de los Muertos), when loved ones who have passed are said to return home to their families. Rather than a time of mourning, it is a festival that welcomes them back with colour and music, rooted in a uniquely Mexican view of life and death. As Sapporo’s trees shed their leaves and the days grow shorter, we bring you Mexico’s most colourful table at the time of year when colour is missed the most. Amber in colour, spice in aroma — an afternoon tea to savour the deepening autumn

The street trees of Sapporo deepen in colour with each passing day. From yellow to orange, and then to amber — as autumn deepens, the city takes on ever warmer tones. Maple syrup, espresso, hojicha, poached pear, fragrant malt scones. Perhaps it is no coincidence that the season’s finest flavours all share the colour of amber.

The Amber & Spice Autumn Afternoon Tea gathers the deepening season plate by plate around this theme of amber, layering it with the aroma of spices — an afternoon tea to be enjoyed through both colour and fragrance.

Nutmeg, cardamom, bergamot, dukkah. When aromatics are layered over the harvest season’s ingredients, flavours grow deeper and richer. Hokkaido Ebisu pumpkin and hanasaki crab quiche is finished with nutmeg and thyme; Hokkaido onion and barley consommé carries a quiet note of cardamom; and poached pear is paired with hojicha jelly and bergamot foam, so that even the lingering aroma becomes part of the pleasure. Our lunch buffet “Spice Market”, with its full-fledged culinary composition centred on spices, has been warmly received over two seasons. This autumn, that expression of aroma is carried into our afternoon tea.

As mornings and evenings grow colder, time spent indoors becomes all the more precious. Beginning at noon, this afternoon tea may be enjoyed as an unhurried lunch or as a leisurely afternoon interlude. Six sweets are matched by six savouries, including truffle arancini and a vol-au-vent of Hokkaido venison bolognese with autumn eggplant, several served warm. Scented with spices, these savouries pair beautifully with wine — and this season, red and white wine join our welcome drink selection.

The very ground on which Hotel Sosei Sapporo MGallery Collection stands is where, in 1876, the Kaitakushi Brewery — the forerunner of Sapporo Beer — was born. Amber is also the colour that marked the beginning of this city. From the start of September until the first snow arrives at the end of November, we invite you to spend an afternoon savouring autumn in colour and aroma, alongside a story found only in this place.
